Pumpkin Spice Low-Carb Pancakes with Blueberries

These pancakes are soooo delicious and support a low-carb, keto or paleo diet.  Loaded with healthy fats, this easy recipe is sure to keep your hunger at bay and your energy up for hours!!  No sugar needed!  With the flavor of Pumpkin Spice and the sweetness of blueberries, they have just the right sweetness!  Top with coconut cream for an extra treat!  

Makes 6-8 pancakes


  • 4 eggs, preferably pasture raised
  • 8 oz. organic cream cheese
  • 1 tbsp. ground flaxseed
  • 1/4 cup Pumpkin Spice Creation
  • 1/2 tsp. vanilla 

Topping options:

  • Blueberries (or any berries)
  • Coconut Cream 
  • Pumpkin Spice Creation


  1. Whip cream cheese until smooth
  2. Add remaining ingredients and blend until mixed well
  3. Let batter sit for a few minutes while you heat butter or coconut oil in frying pan
  4. Fry the pancakes on medium-high heat until golden brown and edges are cooked. Flip and continue to cook until done.
  5. Serve with blueberries and coconut cream or a dollop of Pumpkin Spice Creations.
